This easy lasagna soup recipe is the perfect recipe for saving time and using up the leftover lasagna.
Lasagna is such an iconic comfort food at this point and a great way to spend time with friends and the whole family. Here is a recipe for my take on classico lasagna.

The rich creaminess of the mozzarella cheese with tomato sauce and italian seasoning just works really well and it's just not worth letting any go to waste!
How long does leftover lasagna last for?
After 2 or 3 days, I find that lasagna doesn't taste as good and gets a little dried out. This is the perfect time to make leftover soup and then you can freeze what you don't use and make leftovers with leftovers!!
Lasagna in soup form stores much better in the freezer as long as it is stored in an airtight container that is freezer safe.
The best part of this recipe is that it is a one pot lasagna soup recipe so you aren't creating a big mess like what you just went through to make the lasagna.

Substitutions
The lasagna I am using has a meat filling which is typically italian sausage or ground beef, if you make my recipe you can easily substitute a non meat based sauce if you prefer.
Ground turkey is another good option for a leaner meat option, as well.
Variations
I really want to try using leftover vegetable lasagna to make a creamy white lasagna soup. I would use chicken broth or beef broth and parsley to create a base for the vegetarian lasagna soup.
To cook in a slow cooker just add all the liquid ingredients to your pot and set on low for 6 hours. Put leftover lasagna in at the 5 hour 30 minute mark to reach soup temperature, and serve.

- Water
- Olive Oil
- Lasagna
- Fresh Basil (optional)
- Ricotta Cheese (optional)
- Red pepper flakes (optional)

Instructions

Set a large pot on your stovetop and set the temperature to medium heat.

Add the olive oil to the pan, and heat for 5 minutes.

Put the tomato paste into the pan and stir for a minute.


Add the water and turn the temperature up to medium-high heat and stir in the tomato paste into the water.


Once the tomato paste and water have been mixed together, pour in the jar of tomato sauce and mix.

Empty the tomato soup can in to the pot and stir.


Bring the mixture to a boil and then reduce the temperature to medium low and simmer for 20 minutes without a cover.


Add the leftover lasagna and any extra veggies and heat on the stovetop for 30 minutes or until the lasagna is heated through.

I cut each lasagna piece into quarters before adding to the soup.


Stir the soup together and cover for another 20-30 minutes.


Storage
- Keeps in the refrigerator for up to 3 days in an airtight container.
- Freeze in a freezer safe container or plastic wrap for up to 3 months.

- 1 - 8 ounce can Tomato Paste
- 1 - 16 ounce jar marinara sauce
- 1 - can condensed tomato soup
- 4 Cups - Water
- 1 Tablespoon - Olive Oil
- Leftover lasagna
- Basil
- Ricotta
- Parmesan Cheese
- Red Pepper Flakes
Instructions
- Set a large pot on your stovetop and set the temperature to medium heat.
